Born to a Neapolitan father and Maltese mother, Bernadette grew up immersed in two of the Mediterranean's richest culinary traditions. Her father, a seasoned chef and fisherman who has run a beloved restaurant in Malta for over 35 years, taught her that great food comes from understanding ingredients at their core, their aromas, their textures, the way they speak to each other on the plate. Her mother brought the warmth and soul of Maltese home cooking, where every pastizz and every family meal carried generations of tradition.
Childhood summers in Bacoli, near Naples, deepened her connection to her Italian roots. There, surrounded by the sights, sounds, and flavors of the Campania coast, she absorbed the Italian approach to food: simple, honest, and always from the heart.
She speaks fluent Italian not just in words, but in the way she cooks. Instinctively, passionately, guided by intuition rather than rigid recipes.
Six years ago, Bernadette acquired her first pizza oven. What began as experimentation became an obsession with perfection. Countless batches of dough, endless adjustments to timing, temperature, hydration and technique. All in pursuit of that perfect balance of crisp and chew, lightness and flavor. Today, she's confident she's found it: a dough that honors her Neapolitan heritage while carrying her own signature.
But pizza is only part of the story. From her Maltese side comes the beloved pastizz! That flaky, golden parcel of comfort that's a staple across the islands. Bernadette has mastered the traditional version, but her creative spirit won't let her stop there.

Nearly two years ago, Bernadette and her family made Ireland their home. While they've embraced their new community, they've felt the absence of the Mediterranean food culture they grew up with. The vibrancy, the diversity, the way food brings people together. That gap became her inspiration.
Through her kitchen, and food truck, Bernadette isn't just serving pizza and pastizzi, she's sharing a piece of her heritage, her family's legacy, and her belief that great food made with passion can create connection and joy.
